Odia Mutton Jhola
It is undoubtedly one of those Odia delicacies which is a must have when you visit Odisha. ‘Jhole’ means a water curry which is flavoured with a lot of spices.
Its a simple one pot recipe without any hassles. The use of pressure cooker makes your work quick and easy.
- 500gms mutton
- 3 tbsp Masala paste (4 tsp whole coriander seeds or dhaniya, 2 tsp whole cumin seeds or jeera, 2 medium onions,1 whole garlic, 1’ inch ginger stem)
- 300 gms raw papaya (1 cup papaya) cut in cubes
- 2 medium potatoes
- 1 bay leaf
- 2 tbsp tomato puree
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp Garam Masala powder (mix of cinnamon and cardamom)
- Salt to taste
- Mustard oil
Heat mustard oil in the pressure cooker and lightly fry the potatoes and onions and keep aside once you get a slight golden colour on them. Then add bay leaf and the masala paste and cook for 5 minutes. Add mutton, turmeric powder, red chilli powder, salt and cook till the oil starts to separate from the mutton. Once the oil starts to separate add the tomato puree and stir again till the puree becomes the part of the gravy and starts to separate from oil again.
Add water along the fried papaya and potatoes and pressure cook till the mutton starts falling from the bones.
Add garam masala in the end and serve hot with rice.
